How to make shito at home

Shito is a Ghanaian pepper sauce used for eating different types of food like rice, Waakye, kenkey, banku, garri, etc. Shito originated from the GA people of Accra. Black pepper is another name for shito. 
Ingredients for making shito
Chili powder
Shrimps powder
Dried fish powder
Onion
Garlic
Ginger
Salt
Cooking oil
Tin tomato paste (3tsp)

Method of preparing shito
1.Blend 3 big onion, 1 bulb garlic, 1 big ginger (add little water to help the blender to blend it)

2. Pour the blended mixture into a cooking pot and let it dehydrate for about 20 to 30 minutes.

3. Put different cooking pot on fire and pour about 2 cup of the cooking vegetable oil into the pot. Let the oil temperature rises to 80 -100 °C

4. Add the dehydrated blended mixture into the hot oil. Let it cook for 10 minutes.

5. Add 4 tea spoon of the tomato paste and let it cook for another 10 minutes.

6. Add 4 tea spoon of the powder pepper and let it cook for another 10 minutes.

7.Add 5 tea spoon of shrimp powder, 4 tea spoon of fish powder and stir it. 

8. Reduce the temperature and let it cook till it becomes black while continue stirring it occasionally.

9. When the shito is ready, let it cool down until the next day.
